Cacao Peanut Butter Oat Bars (Vegan/Plant based)

These are very, very, VERY tasty and even Better there’s no baking involved. In our household there’s me my fiancé Jake and Larry the dog, obviously Larry isn’t allowed these so the bars last a while as they make 16. They are a hit, we love them served with a tea of choice or coffee it’s a perfect healthy sweet treat.

INGREDIENTS

The Base

180g rolled oats

60g raisins

75g almonds

20g shredded coconut

Pinch of salt

120g peanut butter

80g agave nectar

30g coconut oil

1 tsp vanilla bean

Chocolate Glaze

80g Date Syrup

30g coconut oil, melted

1/2 tsp vanilla extract

METHOD

Line an 8″ square pan with parchment paper.

The Base. Add the oats, almonds, raisins, salt and shredded coconut to a blender, blend until well combined. To a pan put the peanut butter, coconut oil, agave and vanilla bean, on a low heat stir until melted. Once melted place in the blender and blend with the dry ingredients until combined. Put this mixture into the lined pan and flatten with a spoon to all edges, this is your base complete.

The chocolate glaze. To a bowl put the date syrup, cacao, melted coconut oil and vanilla extract to a pan and stir together until a pourable glazed mixture. Spread this evenly over the base and then refrigerate for 2 hours to set. Then once set cut into squares, or however you wish.
