Almond Vegan Choc Cookies

Oh my days…these are the best vegan cookies I’ve made so far. I added some almond into the mix because WHY NOT. These won’t disappoint, however if you have a fiancé like mine they will be gone in 2 days so I suggest hiding some 😂

Like all my baking and cooking I really enjoy it, it’s my time out. So if you are going to make these, take 20 mins out to chill, not to think too much (apart from the baking part obvs) but take some time out from that busy days of yours for you.

Serves : 22 cookies

Time : 10 min prep 10 mins cooking

Ingredients

1 Flax egg (1 Tbsp Flaxseed 3 Tbsp Water)

1/2 Cup Vegan Butter

1 Cup Coconut Sugar

1 Cup Gluten Free Flour

3/4 Cup Almond Flour

1/4 Cup Almond Milk

1 Tsp Vanilla Extract

4 Tbsp Cacao Powder

1 Tsp Baking Powder

1 Tsp Bicarb

3 Tbsp Almond Butter

1/2 Cup Flaked Almonds

Method

Set the oven to 180 C, line 2 trays with parchment paper.

Mix the flaxseed with the water and put to one side. Place the vegan butter and coconut sugar in a bowl (I like to melt he butter in a pan slightly before) then mix the sugar and butter together.

Add the vanilla extract and almond milk mix again, then add the flours bit by bit with the Bicarbonate soda and baking powered until mixed. Add the cacao powder, almond butter and flaked almonds, mix again. It may be slightly hard to mix but keep going until you have a cookie dough consistency. If at any point you do find the mix too dry add a tiny bit more almond milk.

Once the cookie dough is ready spoon 2Tbsp of the mixture into your hand make a ball and place onto your tray.

10 mins in the oven, checking on them. Then take out,rest on the side and after 5-10 mins they are good to go, when I say good I mean VERY DELICIOUSLY AMAZINGLY GOOD
